Most mornings after the gym, I find myself rather hungry. Fed up of my usual yoghurts and oats I decided to make my own homemade granola. Admittedly, more expensive than store bought but I got to add vanilla protein to make it slightly healthier and made the flavour to suit what I liked.
You’ll need:
- 270g rolled oats
- 100g raisins
- 50g macadamia nuts
- 2 teaspoons chia seeds
- 1 teaspoon each – cinnamon, ginger, nutmeg
- 85g whey protein powder
- 110ml juice or juice
- 4 oz maple syrup
- 3 tablespoons coconut oil
- ¼ teaspoon salt
- 2 teaspoons vanilla extract
- 200g cranberries
Start by lining a baking tray with parchment paper and setting the oven to 150C.
Mix the oats with the spices.
Add any raisins, nuts and seeds.
Add the whey protein powder, juice, maple syrup, coconut oil, salt to a pan. Bring gently to the boil until bubbling, the mixture should thicken.
Add the mixture to the oats and stir.
Pour the oats onto the baking tray and bake in the oven for 40-45 minutes. To avoid the oats burning, continue to mix the mixture every 10-15 minutes. Once cooled add the cranberries or any other dried fruit.
Serve with whatever you fancy, I opted for yoghurt and raspberries.
