If there is one drink that will always make me think of uni, it is without question Pimm’s. After exams, many a summer nights were spent drinking copious amounts of Pimm’s.
This is a Pimm’s Ginger Gin Cup, a slightly more sophisticated take on the classic lemonade version. You start by chopping all your ingredients, then muddling the fruits together. Add ice, the booze and syrup and shake. Pour into a glass and then add in the ginger beer and garnish. It’s a great twist, with the ginger adding a spicy kick. Any gin will pair well with Pimm’s! I just chose one of my old favourite’s Carorunn.
- Juice of 1/2 lemon
- 3 strawberries
- 5 raspberries
- 1 chunk of ginger, cut into pieces
- 3 slices of cucumber
- 3 shots of Pimm’s
- 1 shot of Gin
- 1 shot of Sugar Syrup
- Ginger Beer
You can muddle with whatever fruit you have, I chose the classic Pimm’s fruit. Frozen fruit can also be used as ice to keep the drink extra cold. I loved muddling the ginger, as the smell definitely wakes you up.
Part of the marketing genius of Pimm’s is no one quite knowing exactly what it is. Is it a sloe gin, is it a liquer? Either way, if we declare it as a Gin it definitely explains my love for Gin!
