Sweet Potato and Fish Pie

This recipe is not my own, however after having it made for me at a friend’s house I decided I had to create it. Presenting, Fish Pie as stolen from Susan.

Ingredient you will need:

  • Sweet Potato
  • Fish – either a fish pie mix, or make your own, Salmon, Haddock, Prawns, Trout etc
  • Milk
  • Nutmeg
  • Bayleaf
  • Dill
  • Salt/Pepper
  • Flour
  • Butter or cream
  • Mustard

Firstly, peel and chop your sweet potatoes.

Bring to the boil in salted water. Cook for 25 minutes or until soft.

Whilst the tatties are on, chop the fish into bite size pieces.

In a big saucepan, add the fish and cover with milk. Add in the bayleaf, nutmeg and dill. Bring to the boil, then reduce to a simmer and add in the prawns. When the fish is cooked remove the pan from the heat.

Sieve the saucepan, adding the fish to the bottom of the pie tin and saving the milk for the béchamel sauce.

Mash your potatoes when they are soft, add cream or butter for creaminess depending on preference.

Make your sauce using the milk, and add in some mustard and pepper for flavour.

When the sauce is nice and thick, add it on top of the fish, then add the sweet potato.

Cook in the oven at 180C for 35-45 minutes. Can also add cheese on top of the potato for some extra crunch.

If you are feeling really good, you can do all the washing up whilst the pie is in the oven! Or leave it for the cleaning up fairies.
