Leek and Potato Soup is a classic soup in the Heath household, namely due to my Grandad being a farmer and having an abbundance of spare potatoes and leeks. Which I used to be able to go pick from the fields, as a little girl this was the best thing ever.
Firstly, chop your potatoes and leeks.
Add to a pan with some butter, to soften for 4 minutes. Then add enough vegetable stock to cover the vegetables. Bring to the boil and simmer until the veg is soft.
Use a handblender to puree the soup.
Chop some chives and add a swirl of cream!
