Who doesn’t love steak fajitas cooled down with some lime? Fajitas are great, boys can eat all the meat and I can eat as much guacamole as I want. This dish requires stir fry beef strips, wraps, cheese, and a lot of herbs and spices.
First things first make your marinade, you will need two teaspoons of oregano, rosemary, ginger and paprika. You will also need one teaspoon of nutmeg, chilli powder, chilli flakes as well as a deseeded birds eye chilli and a good grind of black pepper.
Add the spice mix to a bowl.
Stir the spices.
Add the juice of 2 limes and enough olive oil to make a paste. Pop in the fridge for an hour to chill and allow all the flavours to infuse into the oil.
Marinade the beef and leave to chill in the fridge for up to 2 hours, to allow the spices to really soak into the meat.
As previously mentioned, I lived in Houston growing up. Mum has a great collection of plates now, including this chilli dish meant for chips and salsa.
Chop red onions, mushrooms and peppers.
Fry the onions in butter, keep warm in the oven until all the ingredients are ready.
Fry the peppers and mushrooms.
Fry the beef with all the marinade, at this stage heat through any wraps and lay out and condiments for the meal – homemade guacamole and store bought salsa and sour cream.
Plate up, a great make your own meal for entertaining people.
