Fancy a quick and easy dinner that is also relatively cheap? I present my Mum’s tried and tested recipe of mackerel pate.
First step, hard boil your egg. Confession, I had never boiled an egg. Sounds ridiculous but when was the last time you did? I am a fried, scrambled or poached egg girl. After consulting Delia I managed to boil an egg. A great accomplishment.
Grab your mackerel and de-skin.
Mash the egg and mackerel in a bowl.
Fry some onions in butter.
Add the onions to the mixture with some sour cream. Mix well until you are happy with the consistency.
All finished. Serve with bread and any extras, we had some prawns, avocado and tomatoes.
Oh and naturally wine.
