Summer lunches in the office, inevitably getting fed up of limp salad. So roll in quinoa, one of those health foods that have been kicking around for years, that I have only just tried. It’s surprisingly easy to make, you’ll need 20g of quinoa per serving.
Then 200ml of water for each serving, I was making a double portion, hence the 400ml. Simply boil the water, add the quinoa in a pan, bring to the boil, and leave to simmer for 15 minutes. (I either add stock or chilli flakes for flavour.)
Now for the vegetables, chopped courgette.
Layered with peppers and sweet potato. Then roasted in the oven for 30 minutes.
The best purchase I have made for my lunchbox, the Sistema Salad to Go Lunchbox. It has cutlery, separate components and a tiny jar for dressing.
Every night, I get all of the food out the fridge and make my lunch for the next day, a mix of whatever I have. The Brianna’s dressing are my favourite.
Oh so simple and packed with protein.
