I am admittedly on a soup hype at the minute, partly due to the freezing temperatures but also due to the incredible smell when cooking soup! This soup is super simple.
- 450g carrots, chopped
- 1/2 onion, chopped
- Sweet potato, chopped
- Fresh coriander
- 1litre of vegetable stock
Start by chopping all your vegetables!
My hands were so orange after all the chopping.
Add a tablespoon of oil to a pan, add some salt and fry the onion and sweet potato with a teaspoon of ground coriander.
Add the carrots and fry for 5 minutes.
Pour the stock over the vegetables and bring to the boil, then simmer for 20 minutes, until all the vegetables are soft.
Add about half a bag of fresh coriander.
Blitz the soup until smooth, adding in double cream if you wish!
