The best bit about being home over easter? Access to my Mum’s fridge, which tended to be full and an empty kitchen with plenty of appliances. Item 15 on my 101 list was to try new foods. I used to think that I hated avocado and guacamole, having tried it when I was younger. In the last few months, I have discovered that I have been missing out for years.

Avocado is my new best friend!

After various kitchen experiments, here is my guide to guacamole.

Gather and chop the ingredients – avocado, onion, lime, tomatoes, chili.

I struggle to chop onions and chilis finely, so a little lifesaver is a herb chopper. Makes everything so much easier, and ensures that everything is finely chopped.

Cut open your avocado.

If you want chunky guacamole, mash with your fork and you are good to go.

I like mine slightly smoother, so used a food blender to get it super smooth, with the slight addition of lime.

An easy lunch is pasta, with some avocado and cream cheese!
