One of my go to recipes for a simple and cheap dinner, although it is not the quickest of recipes.
Chop your onions and mushrooms. Frozen mushrooms and a selection of mushrooms are also excellent additions.
Fry your onions and mushrooms in oil/butter and add as much garlic to suit your taste-buds.
Add some tarragon and marjoram and black pepper.
Add the risotto rice according to packet instructions, pour in some mushroom ketchup and a big old glass of white wine. Allow to reduce.
Now, the slow part. Add your vegetable stock one ladle at a time, this is slow and laborious but the creamy end result is more than worth it.
