The Londoner, has some incredible recipes not limited to her healthy take on a pot noodle. Perfect for lunch and super quick to prepare at night. Simply boil noodles, make sauce (soy sauce, tom yum paste, miso paste, stock and hot sauce), add vegetables and some prawns! Then when you get to work add some boiling water.

I am going to try a thai variation, with curry paste and some coconut milk. Any other ideas?
