Risotto is one of the best meals when you want some carbs, want some time to switch-off as rather weirdly I find stirring risotto rather therapeutic. Mum this is your fault! This risotto was a sort of open the cupboard and see what vegetables/meat I have to throw together.
Using a leek, 2 red peppers and a yellow pepper.
Herbs were oregano, garlic and smoked paprika.
Add some oil to a heated pan, fry your chopped leek and peppers for 2-3 minutes.
Add the herbs and spices, stirring to ensure they don’t burn onto the pan.
Add the chorizo.
Add the risotto rice, fry for a minute or so, then add white wine and reduce.
Now for the relaxing part, add the vegetable stock a tablespoon at a time. Only adding more in once the liquid is absorbed.
Saute some spinach.
Mix in some cream and you are done.
