Looking for a simple curry? Not your typical Indian or Thai variety, but a more coconuty and fishy recipe. This Coconut Fish Curry certainly hits the spot. Interestingly, when I first made this recipe I struggled to find CoYo in my local Morrisons and Sainsburys. Fast forward half a year and this stuff is everywhere! It is more expensive than coconut milk, but the texture and taste is definitely worth it.
I altered the coconut fish curry, but adding in some frozen spinach and peas. The colour at the end is amazing, a rich and creamy red sauce with flecks of green everywhere. Like Christmas in a bowl, just spicier, more exotic and a few months too late! You could also add in prawns, or any other vegetables you have going. I tend to serve this with some cauliflower rice, or plenty of basmati rice. It’s a great recipe for meal prepping for the week, make one big batch and you have enough to last you a few meals.
