It’s lean, it’s mean and yes its very green. Green Goddess dressing, a vegan friendly salad dressing, simple ingredients that takes seconds to blend! Transforms any salad. I have seen many a recipe for this on the internet so did my own variation. You basically need, herbs (chives, basil, flat leaf parsley), some spring onions, juice of 1 lemon and the zest, avocado, a glug or 2 of olive oil, a glug of white wine vinegar.
Chop up your spring onions, scoop out your avocado.
Add to a blender.
Blend! Season with salt and pepper.
Could not be simpler, a perfect dressing for a salad or for a dip with some crisps/crudites!
Such a bright green dressing. Considering there is no diary in it, I was pleasantly surprised by just how creamy it is. The vinegar and the lemon juice make it very tart/sharp. Definitely going to be making this reguarly for my lunch. It would also be nice as a dressing for pasta, with some chopped tomatoes and feta mixed through.

- 1 Avocado
- 1 Lemon Juice and Zest
- 3 tbsps Parsley
- 3 tbsps Chives
- 5 tbsps Basil
- 2 Spring Onions Chopped
- 2 tbsp Olive Oil
- 1 tbsp White Wine Vinegar
- 1 tbsp Water
Instructions

Chop the spring onion.
